Castagnole ripiene di ricotta
Buongiorno cari, oggi qui da noi è una bellissima giornata, anche piuttosto calda, di conseguenza non può che far bene all’umore…se poi consideriamo che è iniźiato il carnevale…viene voglia di fare festa 🥳🥳🥳, Quale modo migliore che preparare le castagnole ripiene, Io le ho riempite con crema di ricotta, tuttavia si possono riempire con crema pasticcera, nutella ecc.
250 ml di acqua
Ingredienti per la pasta choux:
Un pizzico di sale
250 ml di acqua
100 gr di burro
150 gr di farina
4 uova medie
Olio di semi di arachidi q.b
Zucchero a velo vanigliato
Procedimento:
In un pentolino versiamo l’acqua, il pizzico di sale e il burro tagliato a pezzetti e portiamo sul fuoco, facendo sciogliere completamente il burro, appena inizia a bollire, versiamo la farina tutta insieme, mescolando velocemente per qualche minuto, finché l’impasto formerà una palla sfrigolando e staccandosi completamente dalle pareti del pentolino, a questo punto togliamo dal fuoco e facciamo raffreddare.
Quando sarà intiepidito versiamo l’impasto nella planetaria (si può fare anche a mano mescolando velocemente) e cominciamo ad unire le uova, una per volta, senza aggiungere l’altro fin quando non sarà assorbito completamente il precedente.
L’impasto si presenterà liscio e omogeneo, come fosse una crema densa.
Crema di ricotta
Ingredienti
250 gr di ricotta di pecora
3 cucchiai di zucchero a velo vanigliato
2 cucchiai di liquore all’arancia (tipo cointreàu)
La buccia di un arancio grattugiata
Procedimento:
Facciamo scolare bene la ricotta che andremo a mettere in una ciotola con gli altri ingredienti, mescoliamo in modo omogeneo…la nostra crema di ricotta è pronta per farcire le castagnole
una volta farcite, spolverare con zucchero a velo vanigliato, le nostre castagnole ripiene sono pronte per essere gustate…
N.b. attenzione creano dipendenza 😜
