Cipolle caramellate
In questi giorni in cui le notizie che si susseguono, sono veri e propri bollettini di guerra, i ricordi delle vacanze sembrano quanto mai lontani, a rammentarmi però quei bei momenti ci sono le cipolle di Giarratana 🤣🤣🤣.
Quando vado in vacanza, lunga o breve che sia, sono solita riportare prodotti locali, possibilmente km 0, questa estate ho fatto scorta di un quantitativo invidiabile di cipolle.
Vedendo che quelle rimaste erano in procinto di germogliare, ho pensato di trasformarle in qualcosa di succulento, cipolle caramellate il cui utilizzo è veramente molteplice… con i formaggi stagionati, nei panini con hamburger, con il bollito, per preparare crostini o ancora semplicemente al naturale.
Ingredienti:
1,5 kg cipolle
30 gr zucchero integrale di canna
150 ml di acqua
50 ml aceto balsamico
3 cucchiai di olio evo
Sale q.b
Procedimento:
Puliamo bene le cipolle, le affettiamo non troppo finemente (vedere foto). In un tegame abbastanza capiente, andiamo a versare le cipolle, l’olio, l’acqua, lo zucchero e il sale; mettiamo sul fornello e facciamo cuocere con il coperchio, per circa 20 minuti a 🔥 moderato.
A questo punto togliamo il coperchio e proseguiamo la cottura per 40/50 minuti, sempre a 🔥 moderato, mescolando di tanto in tanto, dovranno scurirsi e asciugarsi.
Trascorso il tempo indicato, dovranno avere un aspetto asciutto e piuttosto scuro.
Alziamo la fiamma e sfumiamo con l’aceto balsamico, facciamo evaporare girando continuamente fin quando non avranno raggiunto un aspetto “caramelloso” 😉
Le nostre cipolle sono pronte per essere gustate, si conservano in frigorifero un paio di settimane… ma dopo averle assaggiate dubito che rimarranno.
